KONA COFFEE BARS
1 cup strong brewed hot coffee
1 tsp. baking soda
2 eggs
1 cup brown sugar
1/2 tsp salt
1/2 tsp. cinnamon
2/3 cup raisins
2/3 cup margarine
1 1/4 cup flour
1 tsp. baking powder
Icing:
2 cups powdered sugar
1-2 tsp. brewed coffee
2 tbsp. butter
Toasted macadamia nuts – chopped
Combine coffee, cinnamon, raisins and baking soda, and set aside until slightly cooled. Mix together margarine, eggs, flour, brown sugar, baking powder and salt. Mix in coffee mixture. Spread into a 10 x 15 inch pan. Bake at 325 degrees Fahrenheit for 20 to 25 minutes. While baking, prepare icing: Mix together sugar, butter and just enough coffee to make frosting easy to spread. Frost while the bars are still warm and sprinkle with chopped, toasted macadamia nuts. Cut into bars and serve.
